Notes
There are plenty of ways you can play with this recipe to suit personal tastes.
We have instructions for making your own sugar syrup here, however, we know that if time is short or you’re not regular cocktail makers you may not have a batch brewed up. Try adding one tablespoon of caster sugar directly to the mango and lime juice and blend this FIRST before adding the ice. Taste test this to make sure it’s not too grainy and sweetness is right before blending in the ice.
If you prefer your frozen daiquiri with a fluffier, more frozen slushies appearance, add more ice (but don’t go overboard or you’ll start to lose flavour). For the luscious-looking stacked glass you see here, will only get 2-3 serves from one mango. Assuming your blender is large enough you’ll need to up the quantities when catering to a crowd.
The colour of your mango daiquiri can vary greatly depending on the type of mango you use and quantity of ice. For a really fun extra touch, you can even through some hulled strawberries in with the mango and make it a Strawberry & Mango Daiquiri with a brilliant sunset orange finish.
